The grapes were harvested in late April, destemmed and cold-soaked for 1-2 days to extract soft tannins, then fermented in the absence of stalks in open fermenters. The resultant wine was aged in a mixture of old American and French oak barrels, with around 15% new French oak.

Analysis - 14.4% v/v Alcohol, pH 3.55 & TA 6.4g/L, <1.0g/L residual sugar (Dry).

Grown at 520m ASL in the Eden Valley, around 260m higher than our Barossa Valley Shiraz vineyards, the extra altitude delays harvest by about four weeks and brings meaningful cooling through the final month of ripening. The skeletal, low-fertility soils atop the Eden Valley Ranges keep crop levels modest, letting tannins and flavours fully mature. The vines are hand-pruned, hand-harvested and grown with minimal water use, with only the best fruit selected for winemaking.

The wet 2021 winter and favourable spring replenished soil profiles, setting the season up with plenty of potential in both quantity and quality. An average to slightly cooler growing season followed, favouring excellent varietal flavours. The vineyard was spared the severe October hailstorm, yielding a close-to-average crop. This late release shows remarkable freshness of flavour and promises longevity with careful cellaring.
